Air fryer garlic baby potatoes are simple, reliable, and always turn out crispy on the outside and tender in the middle!

This recipe uses baby potatoes, olive oil, fresh garlic, salt, pepper, and dried parsley. That is it.

In about 15 minutes of air fryer cooking time, you get golden brown potatoes with crispy edges and fluffy centers.

They are naturally vegetarian and gluten free, and they are the perfect match to so many dishes.

I make these when I need a quick side dish for grilled chicken, baked salmon, or even just eggs for dinner. They are weeknight friendly but also nice enough for a holiday table.

I often serve them alongside Air Fryer Tuna Steak, Ground Beef and Cabbage Skillet, or Air Fryer Kielbasa - add a salad and you have a super quick meal using just the air fryer!

Ingredients

You only need simple pantry ingredients for this recipe!

  • Baby potatoes. These are the base of the recipe. Choose firm potatoes with smooth skins. If some are much larger than others, cut them into quarters so they cook evenly. You can substitute Yukon Gold potatoes cut into chunks if needed.
  • Olive oil. This helps the potatoes crisp and adds flavor. If you prefer, you can use avocado oil or another neutral oil with a high smoke point.
  • Garlic. Fresh minced garlic gives the best flavor. If you only have garlic powder, you can use that, but the taste will be milder.
  • Salt. Salt enhances the natural flavor of the potatoes. Adjust to taste, especially if you are serving with salty mains.
  • Black pepper. Adds mild heat and depth. Freshly ground pepper works best.
  • Dried parsley. This brings a subtle herbal note and color. You can use fresh parsley if you have it, adding it after cooking for brighter flavor.

Storage, Freezing, Make-Ahead Advice

If you have leftovers, store them in an airtight container in the refrigerator for up to 4 days. Reheat in the air fryer at 180°C or 350°F for a few minutes to bring back the crispiness.

You can freeze cooked potatoes, but the texture may change slightly. Freeze in a single layer first, then transfer to a container. Reheat from frozen in the air fryer until hot and crisp.

To make ahead, you can cut the potatoes and store them in cold water in the refrigerator for up to 24 hours. Dry them thoroughly before tossing with oil and seasonings.

Recipe Tips

  • Cut potatoes into similar sizes for even cooking.
  • Do not overcrowd the basket. Cook in batches if needed.
  • Shake the basket halfway through to ensure even browning.
  • If you use frozen baby potatoes, thaw and pat them dry first.
  • Adjust cooking time based on your air fryer model. Some cook faster than others.
  • For extra crispiness, add a minute or two at the end while watching closely.
