These crispy Air Fryer Diced Potatoes are seasoned and golden outside, fluffy inside, and ready in just 20 minutes. Perfect for breakfast, dinner, meal prep, or quick side dishes!

Close up of a serving dish of air fryer diced potatoes.

Sometimes I want crispy potatoes without heating the whole oven, waiting nearly an hour, or using a heavy amount of oil. The air fryer handles that beautifully! You get deeply golden edges and soft centres in a fraction of the time.

These potatoes are seasoned simply with garlic powder, paprika, salt, and black pepper. That combination works with almost anything.

I serve these potatoes with eggs in the morning for breakfast, alongside grilled chicken at dinner, or even for lunch.

One thing I particularly like about this recipe is how forgiving it is. You can peel the potatoes or leave the skins on. You can swap the paprika for Cajun seasoning or Italian herbs. Cook them slightly softer or push them a little longer for extra crunch.

Air fryer diced potatoes have become one of my favourite ways to make potatoes during the week because they are quick, adaptable, and genuinely useful.

Try serving them for breakfast with a Pizza Omelet, or for dinner with Mustard Mayonnaise Chicken Drumsticks!

Potatoes

Potatoes are one of the most versatile ingredients in home cooking because they respond so well to different cooking methods.

Waxy potatoes hold their shape better, while starchier potatoes become fluffier inside.

Yukon Gold potatoes are particularly good for these air fryer diced potatoes because they balance creamy interiors with crisp exteriors, although russets work beautifully if you want a more dramatic fluffy centre.

Why You'll Love This Recipe

  • Air fryer diced potatoes cook much faster than oven-roasted potatoes.
  • Crispy edges develop with very little oil.
  • The seasoning works with breakfast, lunch, or dinner meals.
  • Potatoes are budget-friendly and widely available year-round.
  • You only need a handful of pantry ingredients.
  • Cleanup is easier than traditional roasting.
  • The recipe scales well for meal prep.
  • Garlic powder and paprika create strong savoury flavour without needing fresh ingredients.
  • Leftovers reheat well in the air fryer.

Ingredients

You only need simple pantry ingredients for this recipe!

  • Potatoes. The main ingredient. Yukon Golds give a creamy centre and crisp edges, while russets create fluffier interiors. Red potatoes hold their shape nicely if you prefer firmer cubes.
  • Olive oil. A small amount helps the potatoes brown and crisp. Avocado oil or vegetable oil also work well because they tolerate high heat.
  • Garlic powder. Adds savoury depth without the risk of fresh garlic burning in the air fryer.
  • Paprika. Gives warmth, colour, and mild smoky flavour. Smoked paprika adds more intensity if you prefer a stronger roasted taste.
  • Salt. Essential for bringing out the potato flavour properly. Fine salt distributes more evenly than coarse salt.
  • Black pepper. Adds mild heat and balances the richness of the potatoes.
  • Parsley. Optional, but fresh parsley brightens the finished dish and adds colour.

How to Make Them Extra Crispy

If crispiness is your main goal, a few small details make a big difference.

  • Dry the potatoes thoroughly after washing them.
  • Avoid overcrowding the basket.
  • Cut the potatoes into even sizes.
  • Use only enough oil to lightly coat the surface.
  • Shake the basket halfway through cooking.
  • Cook a few minutes longer if needed for deeper colour.
  • Use russet potatoes for fluffier interiors and crispier edges.
  • Preheat the air fryer fully before adding the potatoes.

If you use frozen diced potatoes, they may release extra moisture. In that case, extend the cooking time slightly and shake the basket more often.

Best Potatoes for Air Fryer Diced Potatoes

Different potatoes create different textures.

  • Yukon Gold potatoes. Creamy inside with crisp edges. Excellent all-purpose choice.
  • Russet potatoes. Very fluffy centres and crunchy exteriors.
  • Red potatoes. Firmer texture and slightly sweeter flavour.
  • Maris Piper potatoes. Popular in the UK for roasting because they crisp well.
  • Baby potatoes. Great for smaller diced pieces and quicker cooking.

Variations

  • Add grated parmesan during the final few minutes.
  • Toss with Cajun seasoning instead of paprika.
  • Use smoked paprika for a deeper flavour.
  • Add dried rosemary and thyme.
  • Finish with lemon zest and parsley.
  • Toss with chilli flakes for heat.
  • Add onion powder alongside the garlic powder.
  • Use taco seasoning for Tex-Mex style potatoes.
  • Stir through crumbled feta after cooking.
  • Add curry powder for warm earthy flavour.
  • Drizzle with hot honey before serving.
  • Toss with ranch seasoning for a savoury twist.

  • Serve as a side for sandwiches.
  • Top with melted cheese and spring onions.
  • Serve with aioli, ketchup, or spicy mayo. Or Bacon Aioli.

Storage, Freezing, and Make-Ahead Advice

Storage - Store leftover potatoes in an airtight container in the fridge for up to 4 days.

Reheating - The air fryer is the best reheating method because it restores crispiness. Reheat at 190°C / 375°F for 3 to 5 minutes.

Freezing - You can freeze cooked potatoes, although the texture softens slightly after thawing. Freeze in a single layer first, then transfer to a freezer container.

Make-Ahead Advice - Dice and season the potatoes ahead of time if needed. Store them covered in the fridge for up to 24 hours before cooking. If they release moisture while sitting, pat them dry before air frying.

Recipe Tips

  • If you want softer potatoes, cut slightly smaller cubes.
  • Keep the potato cubes evenly sized for consistent cooking.
  • Do not overcrowd the basket or the potatoes will steam instead of crisp.
  • Shake the basket halfway through cooking.
  • Taste and adjust salt after cooking because potatoes absorb seasoning differently depending on variety.
  • Leave the skins on for extra texture and fibre.
  • If your air fryer runs hot, start checking at the 10-minute mark.
  • Use smoked paprika if you want a more roasted flavour profile.
  • Add fresh herbs after cooking rather than before so they stay bright and fresh.

FAQs

Do I need to soak potatoes before air frying?

No. This recipe works well without soaking. If you do soak them, dry them extremely well before cooking or they may steam instead of crisp.

Why are my air fryer potatoes not crispy?

Overcrowding is usually the problem. Too much moisture or too much oil can also prevent browning.

Can I use frozen diced potatoes?

Yes. Increase the cooking time slightly and shake the basket more often because frozen potatoes release more moisture.

Should I peel the potatoes first?

That depends on personal preference. Leaving the skins on adds texture and saves prep time. I usually leave them on.

How long do diced potatoes take in the air fryer?

Most diced potatoes cook in 10 to 15 minutes at 400°F (200°C) depending on the potato type and cube size.
