Potato Sausage Bake is a hearty one-pan oven meal made with crispy roasted potatoes, juicy sausages, and caramelized onions. It's the kind of no-fuss comfort food that works for weeknights or casual weekends.

Potato Sausage Bake is the sort of dish that's often on our meal plan. It's so easy and it's always a crowd-pleaser.

Simply toss everything together, pop it in the oven, and in under an hour, your kitchen smells like a cozy Sunday roast. The best part is how little effort it takes for something that tastes so good.

The potatoes roast until crisp on the outside and soft in the middle. Sausages release their juices as they cook, which mingle with the olive oil, thyme, and garlic to create a kind of built-in sauce.

The red onions caramelize in that same fat, turning sweet and slightly sticky. Every bite hits the mark between crispy, savory, and satisfying.

I love how versatile it is. You can use whatever sausages you like-pork, chicken, or even plant-based.

Ingredients

You only need simple pantry ingredients for this recipe!

  • Sausages. Use good-quality ones with at least 80% meat. I use pork, but chicken, turkey, or vegetarian sausages also work well. Just make sure they're fully cooked through.
    Potatoes. The main base of the bake. Use white, yellow, or baby potatoes. Sweet potatoes work if you prefer a touch of sweetness.
  • Red onion. Adds a pop of color and caramelized flavor. You can use yellow or white onions instead.
  • Olive oil. Helps everything crisp and brown evenly. Use any neutral oil if preferred.
  • Garlic. Crushed garlic brings depth and aroma. Garlic powder works in a pinch.
  • Thyme. Dried or fresh thyme adds an earthy note that complements sausages beautifully. You can swap rosemary or Italian seasoning.
  • Salt and black pepper. Basic but essential for balance and flavor.
  • Green beans. A fresh side that adds color and crunch. Broccoli or peas are good alternatives.
  • Gravy. Optional but highly recommended. You can use homemade or instant.

Potatoes

Potatoes are the foundation of this dish, and their texture makes or breaks the result.

I usually reach for white potatoes or baby potatoes because they hold up well to roasting.

They crisp on the outside while staying fluffy inside. If you prefer a more rustic feel, keep the skins on-they add flavor and color.

Potatoes also absorb the sausage fat as it renders, which means every bite gets infused with that deep, savory taste. It's a classic example of simple ingredients doing all the heavy lifting.

How to make Sausage Bake

Preheat the oven to 400°F (200°C).

Cut the potatoes into bite-sized chunks (peeled or unpeeled) and add them to a large bowl along with the wedges of onion and the crushed garlic. Add 2 tablespoons of the oil, thyme, salt and pepper and toss to coat.

Spread it all evenly onto a large baking sheet.

Add the sausages on top and drizzle with a little more oil.

Roast for about 35-40 minutes, turning the sausages halfway through, until the sausages are browned and the potatoes tender.

Steam or boil the green beans for 3-4 minutes or until tender.
Spoon the sausages, potatoes, and onions onto plates.
If desired, serve with a side of green beans and some gravy.

Storage, Freezing, and Make-Ahead Advice

You can easily make this recipe ahead by prepping the ingredients up to a day in advance. Keep the cut potatoes in cold water in the fridge to prevent browning.
