Instead of using sour cream, stir 2 tablespoons of buttermilk into 1 cup of heavy cream.
Cover it well, then leave it on the counter, out of direct sun, for 12-24 hours.

- Zest and juice of 1 lime about 1 teaspoon zest and 2 tablespoons juice
- 1 clove garlic crushed
- Small pinch salt
