Boursin Brussels Sprouts is a simple, flavorful side dish that's ready in just 25 minutes. Roasted to perfection and tossed with creamy garlic and herb Boursin cheese, this recipe is an easy crowd-pleaser. Perfect as a winter side, or for your holiday meal.

If you're looking for a quick and easy way to serve up Brussels sprouts, this recipe is for you.

It's as simple as it gets: two main ingredients: Brussels sprouts and Boursin cheese, plus olive oil, salt, and pepper. That's it.

With just a little prep and 25 minutes in the oven, you'll have a creamy, flavorful side dish that's perfect for busy weeknights or festive holiday meals.

I love this recipe because it's straightforward but still feels special.

Roasting the Brussels sprouts brings out their natural sweetness and gives them crispy, caramelized edges.

Then you add chunks of Boursin garlic-and-herb cream cheese, which melts into a luscious coating that takes the sprouts to another level. The contrast of textures-crisp and creamy-is just so satisfying.

You don't need fancy ingredients or equipment to pull this off, either. You can find Boursin in most grocery stores, usually near the specialty cheeses. If it's not available, any garlic-and-herb cream cheese will work just fine.

As for the Brussels sprouts, look for ones that are firm and bright green, with no yellowing leaves.

And don't skip trimming the ends and peeling off any outer leaves that look a bit rough; it's a small step that makes a big difference in the final dish.

I've made this recipe so many times, and it never fails to impress. Whether you're serving it alongside a hearty roast or just sneaking a few straight from the pan (no judgment!), I think you'll agree it's a keeper.

This recipe post wasn't sponsored by Boursin, I just like it as an ingredient!

What is Boursin?

Boursin is a soft, creamy cheese flavored with garlic, herbs, and spices.

Originally from France, it's similar to cream cheese but with a more intense, savory flavor.

It's versatile, making it great for spreading, cooking, or adding richness to dishes like these Brussels sprouts.

If you can't find it, just use garlic and herb flavored cream cheese.

Storage, Freezing, and Make-Ahead Advice

  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Freezing: Freeze roasted Brussels sprouts without the Boursin in a freezer-safe bag for up to 2 months. Add cheese after reheating.
  • Make-Ahead: Prep the Brussels sprouts (trim and halve) up to a day in advance and store them in the fridge. Roast and add the cheese just before serving.

Recipe Tips

  1. Even Sizing: Cut all sprouts roughly the same size so they roast evenly.
  2. Don't Crowd the Pan: Spread the sprouts out on the baking sheet for better crisping.
  3. Use High Heat: Roasting at 425°F ensures crispy edges.
  4. Toss Midway: Flip the sprouts halfway through roasting to brown all sides.
  5. Serve Immediately: The cheese melts beautifully when hot but can become stiff if left too long.
