TIP: In the past, it was a popular practice to score a cross in the base of them. However, this isn't necessary. If you're steaming or boiling your sprouts it will let too much moisture up into the sprouts and make them soggy.
How to cook Brussels sprouts
Here are two very basic methods of cooking Brussels sprouts.
First, prep the sprouts as above.
Roasting: Toss the sprouts in a little oil, then spread out in a single layer on a rimmed baking sheet. Roast at 400F/200C for 20 minutes or until golden.
Boiling: Bring a pot of water to a boil, add a pinch of salt, then add the sprouts. After 5 minutes, check if they're tender by piercing one with a sharp knife. Cook for a few more minutes if necessary. You want them to be tender, but not overly soft.
