Frying onions.

  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 1 celery stalk chopped
  • 1 tablespoon all-purpose flour
  • 1 pound potatoes peeled and diced
  • 2 cups fish broth or chicken, vegetable
  • ⅓ cup corn kernels
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon paprika
  • ½ teaspoon each salt and pepper
  • 2 sprigs of fresh thyme
  • 6 ounces fish cut into chunks cod/salmon/tilapia etc
  • 6 ounces scallops
  • 6 ounces shellfish shrimp {peeled and deveined} clams, mussels etc.., rinsed and cleaned
  • ½ cup heavy cream

To garnish:

  • Parsley
  • Sliced lemons
