These rolled quesadillas are made with tortillas and a mix of three kinds of cheese, and they taste just like the real thing. They're quick and easy to make and are great as a party appetizer or an after-school snack.

Prepare the tortillas: Place one tortilla on one microwave-safe plate. Repeat with remaining tortillas.

Combine the cheeses: Mix all the cheeses in a bowl until fully combined.

Add the cheese: Evenly distribute the cheese over the tortillas.

Melt the cheesy roll-ups: Microwave each tortilla for 15-30 seconds or until the cheese has melted.

Roll the tortilla: Remove from the microwave and when it's cool enough to handle, roll from one side to the other into a rolled shape. Repeat with the remaining tortillas.

For convenience, use paper plates for each roll-up.

If the cheese doesn't melt all the way, place it back in for a few more seconds.

Try not to place the cheese too close to the edge as it could spill out when rolling.

    I used to make these for my daughter when she was in elementary school (she’s now in college). I’d make them, cut in half, and put in container for her lunch. She loved them and didn’t mind that they were not hot at lunchtime.
