Taco Bell Cheesy Roll Ups

Make your own copycat Taco Bell Cheesy Roll Ups right at home! The warm, soft rolled quesadillas are made with three kinds of cheese.

Equipment

Ingredients

  • 4 flour tortillas
  • ⅓ cup shredded cheddar cheese
  • ⅓ cup shredded monterey jack cheese
  • ⅓ cup shredded mozzarella cheese

Instructions

  • Place each tortilla onto microwavable plates.
  • Mix all the cheeses in a bowl, then sprinkle each tortilla with ¼ of the cheese.
  • Microwave each tortilla for 15-30 seconds or until the cheese has melted.
  • Remove from the microwave and when it’s cool enough to handle, roll from one side to the other into a roll-up shape.
  • Repeat with the remaining tortillas.

Notes

For convenience, use paper plates for each roll-up.
If the cheese doesn’t melt all the way, place it back in for a few more seconds.
Try not to place the cheese too close to the edge as it could spill out when rolling.
Make sure it is cool enough to handle before rolling to prevent burns.
Mix up the cheeses and add the varieties you like or have in the fridge.
Serve with a side of Taco Bell Chipotle Sauce, some Wingstop Ranch, a bowl of Donair Sauce, and a big scoop of Texas Roadhouse Seasoned Rice.
