Whisking in the flour.

Make the roux: To the pan with the fat, whisk in the flour, salt, and pepper. Continue cooking it, whisking continuously, for 8-10 minutes or until it turns into a thick, golden-brown paste.

Adding milk.

Add in the milk: Whisk in the milk a little at a time so the flour paste absorbs it and starts to liquefy. Continue cooking and whisking until the gravy is smooth and thick - about 3-5 minutes.

Whisking in more milk.
