Ingredients
- 1 cup uncooked white rice long grain
- 2 ½ cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- salt and pepper
For the Honey Soy Sauce:
- 4 tablespoons honey
- 3 tablespoons soy sauce
- 2 cloves garlic minced
- 4 tablespoons water
- 1 teaspoon rice vinegar
- ½ teaspoon salt
- 1 teaspoon cornflour dissolved in 1 tablespoon of water
To serve:
- Green beans or other vegetables
Instructions
- Preheat the oven to 400°F / 200°C
- In a baking dish, stir together the rice, chicken broth, soy sauce and sesame oil, then place the chicken thighs on top of the rice.
- Cover the dish tightly with foil and bake for 30 minutes.
- Remove the foil and bake for another 15 minutes or until the rice is tender and the chicken is cooked.
- Meanwhile, dissolve the cornflour into the water, then add it to a saucepan along with the remaining sauce ingredients. Heat gently, stirring often, for a few minutes until thick.
- Pour the honey soy sauce over the chicken and place the pan under the broiler for a few minutes to get the honey soy chicken bubbling and browned.
