Ingredients
- 2 teaspoons oil
- 1 lb (450g) ground beef
- 4 peppers
- 1 cup (75g) mushrooms
- 1 red onion
- 1 teaspoon taco seasoning
- 1 tablespoon oil
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Add the oil to a large skillet or pot over a medium-low heat. When it’s hot, add the ground beef and break it up with a wooden spoon, then let it cook, stirring occasionally, for about 5 minutes or until it’s all crumbly and browned.
- Meanwhile, slice the peppers, onions and mushrooms.
- Place the browned ground beef and vegetables on the sheet pan and stir in the taco seasoning and oil.
- Place the sheet pan into the oven and bake for 15 - 20 minutes or until the vegetables are just soft.
- Enjoy the Mexican ground beef in tacos or fajitas, on its own, in a baked potato, or on rice.

Notes
- If your ground beef is 80% fat or higher, you may not need to use any cooking oil in the skillet as the beef will provide its own oil.
- If your beef ends up releasing too much oil, feel free to drain the excess oil before adding it to the sheet pan.
- Cut your vegetables in bite-sized pieces that are all roughly the same size. This will ensure they all cook evenly and are ready at the same time.
- Spread out the ground beef and vegetable mixture on the sheet pan in an even layer to make sure all of the vegetables get cooked properly.
- Make this a one pan dish by using a cast iron skillet that can go right into the oven.
