Shake and Bake Pork Chops

Ingredients

4 pork chops use either bone-in or boneless
2 tablespoons olive oil

For the Shake and Bake seasoning:

1 cup breadcrumbs
2 tablespoons cornmeal
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground black pepper

Instructions

Preheat the oven to 400°F/200°C and line a baking sheet with parchment paper or aluminum foil.
Rinse the pork chops, then use a paper towel to pat them dry. Brush or rub them all over with the oil.
Mix all the ‘Shake and Bake’ ingredients in a small bowl.

TIP: If your breadcrumbs are big, you could add them to a ziploc bag and grind them up a bit with a rolling pin.

Add the Shake and Bake mix to a large ziploc bag, and add the pork chops, one at a time, seal the bag (leave a little air in) and shake it to fully coat the chop. Discard any unused shake and bake mix.
Place the coated pork chops onto the prepared baking sheet. Bake in the oven for 10 minutes, then flip over and cook for a further 10 minutes or until fully cooked (you can check with a meat thermometer that the internal temperature of the chops is 145F/62C).
Allow the shake and bake pork chops to rest for 5 minutes and serve.

Notes

The time it takes to bake a pork chop will depend on how thick the meat is. A pork chop that is thick up to one inch will take about 20-25 minutes to cook whereas 1.5-2 inches will take at least 30 minutes.
If you decide to sear your pork chops beforehand, reduce the cooking time by 2 minutes.
If your pork chop has a large bone, you may need to add a few minutes to the cooking time.
Pork should be cooked to an internal temperature of 145F, tested with a meat thermometer in the thickest part. This is especially important for bone-in pork chops as the meat near the bone tends to cook the slowest.
For tender pork chops, let them rest for 5 minutes after cooking before serving. This will ensure that the juices are evenly distributed.
If your breadcrumbs are big in large crumbles, you could add them to a Ziploc bag and grind them up a bit with a rolling pin to create a fine texture.
