Ingredients

  • 1 pound smoked sausage sliced (I used Kielbasa)
  • 1 cup uncooked long grain rice
  • 3 cups chicken broth
  • 1 red bell pepper deseeded and sliced
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • Parsley

Instructions

  • Place a large skillet over medium heat.
  • Place the sausage into the skillet and cook for 5 minutes.
  • Add the rice, broth, bell pepper, paprika and salt.
  • Bring to a simmer.
  • Cover and cook for 20 minutes, stirring occasionally. Add a little water if it’s starting to dry out before the rice is cooked.
  • Serve sprinkled with chopped parsley
