Ingredients

  • 2 large sweet potatoes
  • ¼ cup maple syrup
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon each salt and pepper

Instructions

  • Preheat the oven to 400°F/200°C.
  • Peel the sweet potatoes and cut into 1-inch cubes.
  • Add to a bowl and toss with the maple syrup, oil, brown sugar, cinnamon, nutmeg, salt and pepper.
  • Spread the sweet potatoes out onto baking sheets in a single layer, and drizzle with any remaining maple syrup marinade.
  • Roast the sweet potatoes in the oven for 35-40 minutes, turning halfway through, or until soft and beginning to turn golden.
