Ingredients

1 pound breakfast sausages
6 eggs
1 cup whole milk
½ teaspoon salt and pepper
1-2 tablespoons hot honey or 2 tablespoons of honey with ½ teaspoon chili flakes stirred in
1 cup shredded cheddar cheese
To serve: parsley

Instructions

Preheat the oven to 375°F / 190°C.
Heat a skillet over medium heat. Add the sausage to the skillet and cook, stirring to break up the sausage meat until browned all over.
Whisk the eggs and milk in a bowl and pour into a baking dish.
Place the sausages into the baking dish with the beaten eggs.
Sprinkle with half of the cheese.
Place the dish into the oven and bake for 35 minutes or until golden and fluffy.
Drizzle with the hot honey and sprinkle with the remaining cheese. Bake for a further 5 minutes or until the cheese is melted and bubbling.
Sprinkle with the chopped parsley.
Slice and serve warm.

Notes

Brown the sausage well before adding it to the casserole. Extra caramelization means more flavor.
Let the casserole sit for 5 minutes before slicing so the texture sets properly.
