Halloween Oreo Truffle Bats

Ingredients
- 14 oz Oreo cookies (approx 36 per package)
- 8 oz cream cheese - at room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon cocoa powder
- ¾ cup chocolate sprinkles
To decorate
- 14 ounce Oreo cookies
- edible candy eyes
- decorating icing or melted chocolate, to 'glue' the eyes
Instructions
- Line two cookie sheets with baking parchment or wax paper and set aside.
- Add the Oreos to a food processor and process until they form small crumbs.
- Add the cream cheese, cocoa powder, and vanilla to the food processor and pulse a few times until the mixture comes together.
- Add the chocolate sprinkles to a small bowl.Roll spoonfuls of the mixture into balls (about 1 inch balls) and roll them in the sprinkles, then place onto the cookie sheet.
To decorate
- To decorate, take the second package of Oreos, split them apart and scrape out the filling (use it for another recipe). With a sharp knife, cut each Oreo half into two to create half moon shapes.
- For each truffle, add two Oreo sections to each side, like wings, and gently 'glue' on two candy eyes with decorating icing.
- Store the Oreo bats in an airtight container in the refrigerator.

Notes
If you don't have a food processor, you can crush the Oreos by putting them in a ziplock bag and using a rolling pin to roll over them until they're finely crushed.
Be sure to use full-fat cream cheese for best results.
Let the chocolate truffles set in the fridge for at least half an hour before adding the Oreo wings, so they have time to firm up.
Use a sharp knife to cut the Oreo cookies to keep them from crumbling or breaking apart.
