Ingredients
- 1 box Funfetti cake mix 15.25 ounces
- ⅓ cup canola oil
- 2 eggs lightly beaten
- 4 tablespoons rainbow sprinkles divided
- ½ cup vanilla frosting (optional)
Instructions
- Preheat the oven to 350°F. Line a baking sheet with a silpat of parchment paper.
- Add the cake mix, oil and eggs to a medium bowl and beat for a few minutes. Stir in half the sprinkles.
- Place the remaining sprinkles into a small bowl.Roll the dough into small balls, then roll in the sprinkles. Place onto the baking sheet. Repeat with the remaining cookie dough.
- Bake the cookies for 8-10 minutes or until lightly golden.
- Allow the cookies to cool on the tray for a few minutes, then transfer to a wire rack to cool completely.
- If desired, add a little frosting to the bottom of half the cooled cookies, then top with the remaining cookies, to make a sandwich.

Notes
If you can't find a box of Funfetti cake mix, use one box of white cake mix and 3 tablespoons of sprinkles as a substitute.
Use room temperature eggs for smoother cookie dough.
Use a neutral-tasting cooking oil such as canola or vegetable oil for the best flavor.
Do not overmix the cookie dough or the cookies will be tough. Mix until just combined.
For a fun twist, try using different flavors of cake mix and sprinkles to change up the flavor and color of these cookies!
