Ingredients

For the berry compote

  • 1 cup frozen mixed berries
  • ¼ cup water
  • 1 teaspoon honey or sugar

For the cottage cheese filling

  • 1 cup cottage cheese
  • ½ teaspoon vanilla extract

To serve

  • ½ cup granola

Instructions

  • Add the berries, water and honey or sugar to a small pot and simmer for 10 minutes or until the berries have broken down and the sauce is thick. Set aside to cool.
  • Meanwhile, add the cottage cheese and vanilla to a food processor, small blender, or use an immersion blender to whip the cottage cheese for a minute or two until smooth.
  • When the berry compote is cool, spoon layers of whipped cottage cheese, compote and granola into glasses and serve.
  • TIP: You can make the berry compote and whipped cottage cheese the night before and assemble just before serving.
