Ingredients

3 cups shredded red cabbage
2 cups kale stems removed, leaves sliced
2 medium carrots grated
3 scallions thinly sliced
1 red bell pepper thinly sliced

For the Ginger Sesame Dressing:

3 tablespoons soy sauce
2 tablespoons rice vinegar or apple cider vinegar
2 tablespoons honey
2 tablespoons sesame oil
1 tablespoon freshly grated ginger
2 cloves garlic minced

To serve (optional)

2 tablespoons sesame seeds black, white or a mix

Instructions

Add the shredded cabbage and sliced kale to a large bowl.
Peel and shred the carrots, thinly slice the scallions, and deseed and slice the bell pepper - add them to the bowl of vegetables.
Add all dressing ingredients to a small bowl and whisk to combine.
Add the dressing to the bowl of vegetables and toss to coat.
Store in the refrigerator and serve sprinkled with sesame seeds (optional)
