Ingredients

•  Baby potatoes •  Olive oil •  Salt •  Pepper

Step 1

Preheat the oven to 400°F / 200°C. Line a baking sheet with parchment paper.

Cut slits in the potatoes, about ⅛ inch apart, but don’t cut all the way through.

Step 2

Place the potatoes in a single layer on the baking sheet. Drizzle or spray with olive oil and season with salt and pepper.

Step 3

If desired, sprinkle grated Parmesan cheese over the potatoes during the last 5-10 minutes of  baking.
