Cornflake Cookies or Cornflake Candy

You might know this treat as cornflake candy or as cornflake cookies.

They're both a sweet and crunchy confection made by combining cornflakes with a mixture of syrup and peanut butter.

The mixture is typically shaped into clusters or 'cookies' and left to cool until firm, resulting in a simple yet delicious treat.

Why You'll Love This Recipe

  1. Quick and Easy: Minimal effort, maximum reward. These cookies are perfect for last-minute cravings or surprise guests.
  2. Simple Ingredients: No need for a scavenger hunt at the grocery store. The ingredients are kitchen staples you likely already have on hand.
  3. Versatile Flavors: The combination of sweet syrup, peanut butter, and cornflakes creates a flavor symphony that appeals to all taste preferences.
  4. Kid-Friendly: Get the little ones involved in the kitchen. They'll love the process of stirring and shaping the cookies.
  5. Texture Galore: From the gooey peanut butter to the crispy cornflakes, each bite is a textural adventure.

Ingredients

You only need simple pantry ingredients for this recipe!

  • Light Corn Syrup (or Golden Syrup): Adds sweetness and a hint of caramel flavor.
  • White Sugar: Provides sweetness and contributes to the cookies' texture.
  • Smooth Peanut Butter: Infuses a rich, nutty taste and adds a smooth consistency.
  • Vanilla Extract: Elevates the overall flavor profile with its warm and sweet aroma.
  • Cornflakes Cereal: The star ingredient, bringing a satisfying crunch to the cookies.

See the recipe card for quantities and method.

Melted syrup and sugar in a pot.

Add the syrup and sugar to a large saucepan over a medium heat. Bring to the boil then remove the pot from the heat.

You’ll need to work quickly before it cools too much!

Adding scoops of the mixture to a baking tray lined with parchment paper.

Drop tablespoonfuls (or use a cookie scoop) of the mixture onto lined cookie sheets. Set aside to cool and firm up - about 25 minutes.

Variations

  1. Chocolate Drizzle: Melt some chocolate and drizzle it over the cooled cookies for a decadent touch.
  2. Fruity Twist: Add dried fruit like raisins or cranberries to the mix for a burst of sweetness.
  3. Spicy Kick: Sprinkle a pinch of cayenne pepper or chili powder for an unexpected spicy note.
  4. Coconut Crunch: Roll the cookies in shredded coconut before cooling for an extra layer of texture.
  5. Crunchy Nut: Add in ½ cup of peanuts to the mixture.
  6. Funfetti Fun: Add in a few tablespoons of colorful sprinkles. Try adding orange and brown for Thanksgiving, or red and green for Christmas.
  7. Marshmallow: Add a big handful of mini marshmallows once the mixture is cooling (you don't want to melt them!)

Storage

To keep your Cornflake Cookies at their best, store them in an airtight container at room temperature. They'll stay fresh and chewy for up to 7 days

Recipe Tips

  1. Work Quickly: When stirring in the cornflakes, move swiftly. The mixture can cool rapidly, making it challenging to coat the cereal evenly.
  2. Use a Cookie Scoop: For consistently shaped cookies, use a cookie scoop to portion out the mixture onto the baking sheets.
  3. Let Them Cool: Patience is a virtue, especially with these cookies. Allow them to cool for about 25 minutes to firm up and achieve the perfect texture.

FAQs

Can I use crunchy peanut butter?

Yes, you can. It will add more texture to the finished cornflakes cookies.

Can I use honey or maple syrup instead of corn syrup?

Yes, both will work but will add flavors. Not that that's a bad thing!

Made these last night, cause I wanted a treat and had all the ingredients. Reminded me of Christmas with my best friend. Her mom made a cereal no bake cookie that I loved. Thank you.
