What is Kielbasa?
Kielbasa is a long, U-shaped Eastern European sausage. It is usually smoked and cooked but is sometimes found fresh.
Different countries and regions have their own versions with various meats and seasonings, as well as shapes and lengths.
Although kielbasa is usually considered a Polish sausage, there are similar versions from Russia, Ukraine, Czech Republic, Hungary, and Germany.
In Poland, kielbasa is particularly popular at Easter and for weddings.
Some other names around the world:
- Kiełbasa (Poland)
- Klobása (Czech Republic)
- Kovbasa (Ukraine)
- Kranjska klobasa (Slovenia)
- Kолбаса (Russia)
- Kolbász (Hungary)
- Kielbasa/Polish sausage (USA)
- Kolbassa / Kubasa / Kubie (Canada)
Are kielbasa and Polish sausage the same?
Kielbasa is the Polish word for sausage (kiełbasa), so any meat sausage from Poland, or cured in the Polish style, is a kielbasa. In the Czech Republic, it's called klobása.
In the USA, it usually refers to a U-shaped coarse, smoked sausage.
What is kielbasa made out of?
Traditionally, kielbasa was made out of pork. However, these days it can be made of single meat, or a mix of meats, including pork, beef, chicken, turkey lamb, or veal.
Can you eat Polish sausage raw?
In the USA, kielbasa is usually cooked and smoked before being packaged and sold at grocery stores, unlike brats or raw sausage links, which are sold completely raw.
You can eat cooked kielbasa straight from the package cold (double-check the package to be sure!), however, it is often heated and cooked again before serving, or used in recipes.
How to cook kielbasa
Smoked kielbasa can be served cold or hot; fried, boiled, baked, or grilled. Try cooking it one of these ways for your kielbasa recipes.
- Pan Fry - Slice your kielbasa into ½-inch or 1-inch slices. Then simply add to a non-stick frying pan or skillet over a medium heat and cook for 5-8 minutes, turning often, until browned. Add to non-stick skillet over medium heat.
- Grill - Grill your smoked Polish sausage over a medium/high heat for 4-5 minutes on each side, or until heated through.
- Stove Top - Boil 3-inches of water in a pan, then reduce the heat to low and simmer for 10-12 minutes. Note: if the heat is too high, the sausages could burst.
- Baked - Preheat the oven to 400°F. Place the kielbasa sausages onto a baking pan (or dish). You'll need to poke a few holes in the sausage with a knife (so it doesn't burst), and bake for 10-15 minutes or until the skin is lightly browned and the sausage is heated through.
- Air Fryer - Learn how to cook air fryer kielbasa - it's quick and easy! Just slice and cook for 10 minutes, tossing occassionally.
- Instant Pot - Use your instant pot to cook up polish sausage - try browning the sausage on saute setting, or cook it with cabbage and potatoes on high for 10 minutes. Check out this instant pot kielbasa recipe.
