- Chicken Wings - if using frozen, thaw them out safely first.

- Garlic - This recipe calls for garlic paste. You can buy it, or make your own by crushing 3 cloves of garlic and then scraping it on a cutting board with a knife to puree it further.

- Butter and Oil - use salted or unsalted butter and your usual cooking oil (canola, olive etc...)

How to cut chicken wings
To cut full chicken wings, use a sharp knife to separate the wing at its joints and cut each wing into two pieces (flat and drumette).
If the wing has a tip, cut it off and discard it.

Place the chicken wings into a deep bowl, and add the olive oil, garlic paste, garlic powder, salt, and pepper. Save the parmesan and butter for later in the recipe.
Thoroughly mix the wings so that each part is coated. If you wish, you can cover the bowl with cling film and leave it for 30-60 minutes to marinade.
To cook in the oven:
Preheat the oven to 390°F. Line a baking sheet with parchment or foil.
Transfer the chicken wings to the lined baking sheet and bake for 15 minutes, then turn each one over with tongs and bake for a further 5 minutes or until browned and cooked through (internal temperature reaches 165°F).
To cook in the air fryer:
If you are baking the wings in an air fryer, you will need to preheat it for 5 minutes to 390F. Then lay the wings in the air fryer basket in a single layer (you may need to cook in batches so as not to overcrowd the basket). Bake at 400°F/200°C for 15 minutes.
Use tongs to turn each wing over and bake for another 7 minutes, or until browned and cooked through (internal temperature reaches 165°F).
To finish: Put the hot cooked wings into a bowl, pour over the melted butter, and add the grated parmesan. Toss to coat each piece with Parmesan and butter. Serve the wings right away.

Don't overcook your wings! You need to ensure that they are safely cooked through (the internal temperature should read 165°F with a meat thermometer) but don't overcook any small ones or they could dry out. You can remove the smaller ones from the oven or air fryer early with tongs, once they are cooked through.
