    If you're looking for a super fun holiday treat, then you've got to try these easy Christmas Tree Meringue Lollipops!

    Simply whip up meringue, add color and then pipe it on sticks in a tree shape. Bake in a low oven until dry.

    You can also add any sprinkles you like to make it look super festive.

    My kids absolutely love making these meringue pops every year. The whipping, the piping, the decorating. They're all fun.

    But of course, the kids love adding sprinkles too!

    What Is Meringue?

    Meringue is a foam created by whipping liquid egg whites until they create air bubbles that stiffen into a firm structure of stiff peaks. This is then stabilized with heat when baked in a low oven. The addition of sugar not only helps the taste, but also aids stability and structure.

    Ingredients

    You only need simple ingredients to make these meringue Christmas trees.

    • Egg whites - Ensure they are at room temperature and there is absolutely no yolk in the whites.
    • Sugar - just regular granulated white sugar is perfect for making these meringues.
    • Peppermint extract - for a festive flavor. You can swap it to vanilla instead.
    • Green gel food coloring - to get that green tree color.
    • Sprinkles - use any sprinkles that you like for a fun and festive look.

    Tools: You will also need a stand mixer (or bowl and electric mixer), Silpat or baking parchment paper, baking sheet, piping bag, nozzle, and popsicle sticks.

    Beating meringue.

    Use a stand mixer whisk or electric whisk to beat the egg whites until soft peaks form.

    Whisk in the sugar, a little at a time and keep whisking until glossy with stiff peaks.

    Gently fold in the green food coloring gel and peppermint extract.

    Spoon the green meringue into a piping bag fitted with a nozzle (star or round, whichever you prefer).

    Pipe a little line and add a popsicle stick, then pipe a tree shape over the top half of the stick. Repeat with the remaining meringue.

    Decorate each meringue Christmas tree with sprinkles.

    Bake the meringues for 1 hour at 200°F (95°C), then turn off the oven but don't open the door.

    Let the oven cool down for 2 hours before opening the door and removing the meringue lollipops, otherwise, they could crack.

    NOTE: DON'T open the oven door during or after baking or the meringues could crack or deflate.

    Cook's Tips

    Don't open the oven door until it's cool, so the meringues don't deflate or crack.

    For best results, use room temperature egg whites.

    If there is any grease in the bowl or on the whisk, then the egg whites won't whip up properly. Ensure they are all very clean before you get started. A glass or stainless steel bowl is best, since grease is harder to remove from plastic.

    Don't let any egg yolk get into the whites or they won't stiffen.

    Although you can make meringue by hand, it's much easier with a stand mixer or electric mixer, with whisk attachments.

    Variations

    • Try adding crushed candy canes for decoration.
    • Use different gel food colors for a different look.
    • Separate the meringue into two bowls before adding different colors to each. Then add each colored meringue to each side of the piping bag. Then, when you pipe out the trees you'll get a swirled color look.

    Storage

    Store your Christmas tree meringue lollipops for up to 2 weeks in an airtight container in a cool, dry place away from direct sunlight.
