    Beating the butter and sugar.

Beat the butter and sugar in a mixing bowl with an electric mixer, then beat in the mashed banana and vanilla.

Mixed wet ingredients in a bowl.

Beat the eggs into the banana mixture.

    Sifting in the dry ingredients.

Sift the flour, baking powder, cinnamon, and salt into the bowl and stir to combine.

Stirring chocolate chunks into the banana bread batter.

Stir in the chocolate chips or chopped chocolate pieces.

    Batter in a loaf pan.

Pour the batter into the pan and spread evenly to the edges.

Cover with foil and bake for 30 minutes, then remove the foil and bake for a further 10-15 minutes, or until an inserted skewer comes out clean.

Baked banana bread cooling in the pan.

Allow the banana bread to cool in the pan on a wire rack, before taking it out of the pan.

Sprinkling icing sugar onto the banana bread.

Dust the cake with the icing sugar, cut into slices and serve.

    Cook's Tips

For best results, your butter and eggs should be at room temperature. Don't worry if you're not organized enough to leave them out though, it will still work!

You can use frozen ripe bananas, just make sure they thaw before adding.

The browner/riper the bananas are, the sweeter and more flavorful the banana bread.

The bananas don't have to be completely pureed, just mash them well, but some small chunks is just fine.

    Variations

Try swapping the chocolate chips for white chocolate, peanut butter chips, or butterscotch chips.

Swap the vanilla extract for almond for a different flavor.

Stir in 2 tablespoons of cocoa powder for a double chocolate banana bread.

Add ½ cup chopped nuts, such as pecans, walnuts, almonds etc...

    Storage & Freezing

Store your chocolate chip banana bread in an airtight container on the counter for up to 5 days.

Freezing: You can slice and wrap the banana bread and freeze for up to 3 months. Thaw and enjoy.
